Combine the flour, sugar, chocolate, and cinnamon in a large bowl
Add the cold butter cut into small pieces and mix with your fingertips until it forms a coarse crumbly texture
Add the egg and mix well
Shape the dough into a ball, wrap it in plastic wrap or aluminum foil, and refrigerate for 30 minutes or until firm to handle
Open the dough one-third at a time on a floured surface, about 3mm thick
Cut with a star-shaped cookie cutter or a similar shape
Place the cookies on an ungreased baking sheet, leaving a 1cm space between each one
Bake in a moderate oven (180°C) that has been preheated for 10 to 12 minutes or until firm
Remove the cookies from the baking sheet and let them cool
Decorate with glaze
Store in an airtight container
Yields 120 cookies.
