Beat the egg yolks with the sugar and butter until well combined
Add the cooked sweet potato and beat again
Remove from the mixer and add the flour, alternating with the cooking liquid, beginning and ending with the flour. Reserve
Beat the egg whites until stiff peaks form and fold them into the batter
Add the yeast and mix gently
Pour the batter into a greased and floured tube pan or Bundt pan and bake in a medium preheated oven
