4 eggs (separate whites and yolks)
1 cup of sugar (180g)
1 cup of grated carrots (100g)
1 cup of all-purpose flour (120g)
1 teaspoon of active dry yeast

In a stand mixer, beat the egg whites until soft peaks form (approximately 2 minutes)
Add the sugar and continue beating until stiff peaks form (approximately 2 minutes)
Add the yolks and beat until the mixture is smooth (approximately 5 minutes). Reserve
In a medium bowl, combine the carrots, flour, and yeast, mix well, and add to the yolk mixture
Mix carefully
Add the oil and cinnamon and mix
Place in a 20 cm diameter refrigerator and cook on low power in a microwave (approximately 25 minutes)
Let cool
Remove from mold, let cool completely, and dust with confectioner's sugar
Garnish with cinnamon sticks and serve
