In a stand mixer, beat the egg whites until soft peaks form
Add the sugar and continue beating until stiff peaks form
Add the yolks and beat until the mixture is smooth
In a separate bowl, combine the grated carrot, flour, and yeast
Mix well and add to the yolk mixture with caution
Add the oil and cinnamon
Mix well
Place in the cake pan
Bake in the microwave on low for 25 minutes or until firm
Let cool completely before dusting the center with confectioners' sugar
Decorate with a cinnamon stick and serve.
