3 cups of basic cake mix
1 tablespoon of ground cinnamon
1/2 cup of chopped hazelnuts, pecans, or almonds (optional)
1/3 cup of raisins
2 eggs
3/4 cup of grated carrots (not fine grate)
1 tablespoon of lemon juice
confectioner's sugar for dusting (optional)

In a 20cm round form, place the cinnamon, nuts, cake mix, and raisins
Mix well
Next, combine the eggs, carrots, and lemon juice until everything is well mixed, scraping the sides of the form with a spatula
Bake in a moderate preheated oven (180°C) for about 35 minutes or until a toothpick comes out clean
Let it cool down in the same form
If desired, dust with confectioner's sugar
Serves 4 to 6 people.
