Grease and flour a 25cm diameter cake pan. Reserve
Preheat oven to 180°C (medium)
Prepare the batter: in a small bowl, whisk together flour, yeast, salt, baking soda, and coconut. Reserve
In a stand mixer, beat butter with granulated sugar until light and fluffy (approximately 4 minutes)
Add eggs one at a time, beating well after each addition (approximately 2 minutes)
Gradually add sweetened condensed milk, alternating with dry ingredients, mixing well with a rubber spatula. Reserve
In a stand mixer, beat egg whites until stiff peaks form
Fold into the batter and mix delicately with a spatula
Pour into prepared cake pan and bake in preheated oven until a toothpick inserted into the center comes out clean (approximately 40 minutes)
Let cool.Prepare the topping: while the cake is cooling, combine all ingredients in a medium saucepan and cook over medium heat, stirring constantly with a spatula, until smooth (approximately 5 minutes)
Spread over the cooled cake and let cool completely
Cut into slices and serve
