Butter (for greasing)
2 medium chicken breasts, skinless and boneless (580g), cut into small pieces
1 medium onion (100g), cut into small pieces
4 medium tomatoes (480g), seeded and chopped, cut into small pieces

For the sauce

Grease a 6x10x21cm loaf pan with butter and set aside
In a medium saucepan, combine all the ingredients except the eggs and bacon
Cook over high heat, stirring occasionally with a wooden spoon, until the mixture starts to simmer (about 5 minutes)
Reduce the heat to medium, cover the saucepan, and cook, stirring occasionally, until the chicken is tender (about 10 minutes)
Preheat the oven to 180°C
Transfer the chicken and thyme mixture to a processor and process until smooth
Place in a bowl, add the eggs and bacon, and mix delicately with a spatula
Transfer to the prepared loaf pan and bake in the preheated oven until firm (about 40 minutes)
Remove from the oven and let it cool
Unmold onto a serving plate and set aside
Prepare the sauce: In a small saucepan, combine the cream cheese and milk
Cook over low heat, stirring constantly, until the cream cheese melts (about 2 minutes)
Transfer to a blender, add the thyme, and blend until smooth
Cover the chicken with this sauce and serve immediately
