Preheat the oven to hot (200°C)
Grease 5 muffin tin cups with butter
In a saucepan, mix the sugar with water and bring to a boil until it reaches the consistency of paste
Remove from heat and add in melted butter
Let cool
Mix in egg yolks and add in the warm mixture along with cheddar cheese
Mix well
Pour into prepared muffin tin cups, place them in a refrigerator and bake inside a water bath at 200°C until a toothpick comes out clean
Let cool and unmold onto individual plates
Decorate with caramelized sugar spread in strips on an oiled surface
Allow the caramel to set and garnish the plate
Serve at room temperature.
