For the dough:
1 cup of water
1/2 cup of butter or margarine
1 pinch of salt
1 cup of all-purpose flour
4 eggs
For the filling:
1/2 cup of mayonnaise
2 spoons of softened butter or margarine
1 spoon of lemon juice
1 cup of cooked ham, finely chopped (155g)
1 cup of shredded palm heart
1/4 cup of finely chopped onion
black pepper to taste

Preheat the oven to 200°F
Grease two baking sheets and set aside
In a pan, mix together water, butter or margarine, and salt
Bring to a boil
Add all-purpose flour at once and stir vigorously
Reduce heat
Stir until the mixture pulls away from the sides of the pan
Remove from heat and let cool for a few minutes
Add eggs one at a time, stirring well after each addition
Pour spoonfuls (about 2-3 tablespoons) into prepared baking sheets or use a piping bag
Bake for 25 to 35 minutes, or until the fritters are puffed and golden brown
Let cool
Cut in half
For the filling: In a small bowl, mix together mayonnaise, softened butter or margarine, and lemon juice
Beat with an electric mixer on medium speed
Add remaining ingredients and stir well
Place 1/2 spoon of filling in each fritter
Yield: 50 units.
