1 head of broccoli (about 1.3 kg)
1/2 cup of green scallion
3 tablespoons of butter or margarine
2 tablespoons of lemon juice
1/2 teaspoon of grated lemon zest

Wash the broccoli and remove the leaves
Leave about 10 cm of stem
Peel the stem and cut it in half lengthwise
Cook the stems of the broccoli in boiling salted water for about 8 minutes
Add the florets and cook for another 6 minutes
Drain well
Keep warm
In a small pan, cook the green scallion in butter until it's soft but not brown
Add the lemon juice and stir well
Mix with the broccoli
Place on a platter and sprinkle with grated lemon zest
Serve 4 portions.
