1 medium onion, finely chopped

4 tomato seeds removed and cut into cubes
1 green bell pepper seeds removed and cut into cubes
1 cucumber peel and seeds removed and cut into small pieces
500g shrimp
5 tablespoons apple cider vinegar
2 tablespoons freshly squeezed lime juice
Salt and black pepper to taste
Optional: chopped sausage and finely chopped scallions

In a bowl, combine all the ingredients, add the shrimp and mix well
Cover with plastic wrap and let it rest for 2 hours
Arrange the lettuce leaves in a salad bowl and top with the shrimp salad
Serve immediately.
