1 1/4 cups of oil
1 kg beef cut into small cubes
100 g fresh pork rind cut into small cubes
1 large onion, finely chopped
1 clove of garlic, minced
1 teaspoon salt
2 cloves of garlic, mashed
3 liters of water
2 sprigs of rosemary
2 tablespoons of parsley, chopped
2 tablespoons of chives, chopped
2 tablespoons of thyme, chopped
2 tablespoons of cilantro, chopped

Heat the oil in a pot and fry the meat until golden brown
Add the pork rind, finely chopped onion, garlic, salt, and water
Let it cook on high heat for about an hour and a half or until the meat is tender and falls apart
Add the rosemary and, if needed, more water
When ready, season with salt, add the parsley, chives, thyme, and cilantro
Stir well and serve.
