2 whole carrots, peeled
4 stalks of celery
2 leek white and green parts
2 red beets
1 bouquet garni (onion, parsley, thyme, 2 sprigs of rosemary)
1 ripe tomato, core intact
1/2 head of white cabbage
1/2 bunch of chives
1 cup of dry white wine
Salt to taste
3 liters of water

Bring all ingredients to a boil in high heat
Reduce heat and simmer for 1.5 hours to 2 hours, skimming the foam that forms on the surface occasionally
Strain through a cheesecloth.
