Peel and grate the ginger
Set aside
Cook the sweet corn in water with salt until it becomes soft
Using a knife, cut the sweet corn from the stalks and blend with half cup of cooking liquid in a blender
Set aside
Heat the olive oil and sauté the onion until it becomes translucent and add the ginger
Add the sweet corn, stir, and add hot milk
Cook until thickened
Season with salt and nutmeg and serve immediately.
