2 fish heads with clean skulls
2 salt stalks, cleaned and cut into pieces
2 large onions, cut into pieces
3 liters of water
1 green bouquet garni
(1/2 onion, 4 scallions, 1/2 sprig of parsley and thyme tied with string)
1 large carrot, cut into pieces
Salt and black pepper to taste

Separate the solid ingredients and put them in a pot

Add water and bring to a boil for 30 minutes

Strain and let it cool down
Adjust in ice trays, separated so that they do not stick together, and freeze until firm
Release the cubes and store them in plastic bags
Close well and return to the freezer or use in your recipes.
