Pour the heavy cream into a large bowl
Season with salt and pepper
Let the crab soak in the cream for 30 minutes; drain
Coat the crab in wheat flour, then the eggs, and finally the shredded coconut
Arrange the crab in a shallow baking dish lined with aluminum foil
Pour the melted butter or margarine over the top
Bake at high heat for about 8 minutes until golden brown
Serve hot, portioning into 3 to 4 servings
