Wash the shrimp, but don't dry them
Place the lettuce leaves at the bottom of a heavy skillet and put the shrimp on top to cook with the moisture left from washing
Add the vinegar and sprinkle the herbs with seasoning on top
Cover the skillet with a tight-fitting lid or a heavy grater to form gentle pressure
Leave over low heat for 20 minutes
The exact time depends on the size of the shrimp
Larger ones take 20 minutes
Don't open until the end of cooking, only then
Let it cool slightly and remove the shell, keeping the tail intact
Split in half without separating completely, leaving like a butterfly
Place under a heavy plate or meat platter to preserve the shape after cooling
Dip into batter and fry in hot oil until golden
