Grilled Shrimp with Shiitake Mushroom and Mashed Potato Sauce

    For the shrimp

    Season the shrimp with salt and pepper, then grill them. Cook the asparagus and green beans.

    For the mushroom duxelle

    Sauté the mushrooms. Reserve. In a little chicken broth, cook the potatoes and carrots. Mix them with the reserved mushrooms and fill the puff pastry. Close the pasty and cook it in plenty of boiling water.

    In a pan sauté the potato, adding the chicken broth gradually. Season with salt, white pepper, and lemon juice.

    Place the mushroom duxelle on the plate and arrange the shrimp around it in an opposite position. Garnish with asparagus and green beans. Decorate with the mashed potato sauce garnished with a red bell pepper leaf.
