600 g large and clean shrimp
1/2 teaspoon dried thyme
1 tablespoon salt
1/2 teaspoon ground ginger
1/2 teaspoon hot paprika
1 dash of cayenne pepper
1 tablespoon olive oil
Coriander Sauce
1 cup coriander leaves
1/2 cup mayonnaise
5 tablespoons lemon juice
2 tablespoons rum
Salt and black pepper to taste

Season the shrimp with thyme, salt, ginger, paprika, and cayenne pepper
Let it rest for 30 minutes
Heat the olive oil in a skillet or grill and add the shrimp
Grill until golden brown on both sides
Coriander Sauce
Blend all ingredients in a blender or processor until smooth
Season with salt and black pepper
Serve the shrimp with the Coriander Sauce.
