Run a fork along the entire surface of the cucumber in the direction of its length and press it firmly to leave the strips with a nice pattern
Trim the ends of the cucumbers
Cut into thin slices and let them drain on paper towels for 30 minutes
If using ricotta, sift it through a sieve
Mix with yogurt, onion, parsley, and season with salt to taste
Spread over half of the cucumber slices
Place a thin slice of smoked salmon, ham, or defatted chicken breast in the middle
Press the ricotta firmly
Cover with the remaining cucumber slices
Make 25 canapés.
