In a medium bowl, combine the flour and butter
Mix rapidly with your fingertips until a coarse crumb forms
Add the Parmesan cheese and mix with a fork
Season with salt and black pepper
Knead in cold water, mix well, and shape into a ball
Chill slightly
Dampen a work surface slightly
Place a sheet of parchment paper, the dough, and another sheet of parchment paper
Roll out the dough to a thickness of about 0.5 cm
Cut into shapes with a cookie cutter
Place in a plastic container that can go into the freezer, separating layers with parchment paper
Close and freeze
When serving, preheat oven to hot temperatures, place frozen bites on baking sheets without butter, leaving space between them
Gently brush with egg wash
Sprinkle with breadcrumbs and bake, still frozen, for 10 minutes or until golden brown
Serve warm
