4 cloves of garlic, minced
1/2 cup chopped onion (75 g)

1.5 kg chicken cut into small pieces
1 tablespoon salt
1 tablespoon chopped parsley
4 medium tomatoes, seeds removed and chopped (400 g)
1/3 cup rice
6 cups water
2 tablespoons vinegar

In a large pot, over high heat, sauté the garlic and onion in oil until they're soft
Add the chicken, salt, parsley, tomatoes, and cook, stirring occasionally, until boiling
Cover the pot, reduce heat, and simmer until the chicken is tender
Combine the rice, water, and vinegar
Increase heat again and cook for about 25 minutes
Transfer to a serving dish and serve immediately.
