1 large arugula leaf (available at specialty stores)
100g beef fillets cut into small cubes
1/2 cup finely chopped onion
1 tablespoon butter
1/2 cup sautéed mushrooms
50g mozzarella shredded

50g mozzarella shredded
Sauté the onion in butter until it's soft and translucent
Add the mushrooms and cook for 1 minute
Add the beef and cook until it's tender
Season with salt and black pepper to taste
Remove from heat, add mozzarella and mix well
Spread the filling on one side of a large arugula leaf opened out
Roll up like a cigar, closing the sides inward
Place in a hot oven preheated for 5 minutes and serve warm.
