Step 1: In a saucepan, combine the guava with water and bring to low heat, stirring until it dissolves and reaches a paste-like consistency
Add the lime zest and rum
Stir and remove from heat
Let cool completely
Step 2: Once cooled, add the cubes of cheddar cheese and mix delicately
Stuff each fritter shell with the mixture
Garnish with a leafy green
Serve two fritters per plate
If desired, serve with whipped cream or ice cream.
