4 Spheres of Mango or Vanilla Ice Cream (available at artisanal ice cream shops)
Leaves of Mint and Poppy Seeds (for decoration)

Place the orange juice and pineapple in a saucepan (1)
Bring to a simmer and let cook for 7 minutes
Wait for it to cool down
Cut each papaya into 10 chunks (2), peel them (3) and place them in the orange syrup to soften slightly on the surface (4)
To serve, place 5 chunks of papaya on each plate, forming a sunflower shape
Douse the chunks with the syrup and place a sphere of whipped cream in the center (5)
Decorate with mint leaves and sprinkle poppy seeds over the top
