Prepare the zabaglione cream: in a bowl, place the egg yolks and sugar over a bain-marie, whisk until stiff peaks form
Batter well with an electric mixer until the mixture increases in volume
Add the Port wine and continue whipping until thickened
Dip a spoon into the cream and pass your finger along the sides of the spoon; if the cream separates into two parts, it's ready
Remove from the bain-marie and reserve
Mix the starfruit with the apples and almonds
Assemble in dishes and top with zabaglione
Bake at 350°F for 8 minutes
