In a pressure cooker, place the meat, one onion cut into four pieces, the rosemary, and salt
Cover with enough water to cook the meat in the pressure cooker for 45 minutes
Turn off the heat, let the pressure cooker release, and check if the meat is tender
If not, cook for more time
Reserve a cup of the broth that formed in the pot
Let the meat cool down and shred it
In a pan, place the reserved broth, the remaining onion cut into rings, and the peppers cut into strips
Let simmer and turn off the heat
In a baking dish, place the shredded meat, onions, peppers with the broth and olives
Season with more salt if needed, drizzle with olive oil, vinegar, and sprinkle parsley
Serve cold.
