3 medium sweet potatoes
1 small onion finely chopped
5 soup spoons of olive oil
6 eggs
120g of salami cut into thin slices

Peel the sweet potatoes and cut them into fine strips
Do the same with the onion
In a non-stick skillet, heat three soup spoons of olive oil, layering in sweet potato and onion
Leave on low heat with the skillet covered for 20 minutes
Beat the eggs well and pour over the sweet potato and onion layers
Distribute slices of salami over them
Fry both sides until golden brown
Serve immediately.
