Preheat the oven to high heat
Season the meat with salt and black pepper
In a bowl, mix together the mustard with the breadcrumbs and grated cheese
Add the olive oil and mix well until you get a consistent paste
Spread the paste over the meat
Place the alligator in a baking dish with melted butter for one minute to melt it
Transfer the alligator to the baking dish and place it in a medium preheated oven for 45 minutes, or until it reaches your desired level of doneness: undercooked, at point, or well-cooked.
