1/2 cup (90 g) of grated provolone or plate cheese

3/4 cup of breadcrumbs from breakfast bread
3/4 cup of scalded milk
2 whipped egg whites

Reserve 2 tablespoons of grated cheese
Mix well the remaining cheese with the eggs, breadcrumbs, and milk
Carefully mix in the whipped egg whites
Place in two large refractory bowls or four smaller ones (use mini muffin tins)
Sprinkle with reserved cheese
Bake in a moderate temperature oven (170°C) for 35 to 40 minutes or until a toothpick inserted into the center comes out clean
Serve immediately.
