5 tablespoons of oil
1 large onion, chopped
4 cloves of garlic, minced
2 sprigs of rosemary, chopped
1 kg of mole ground beef
4 eggs
4 tablespoons of butter
4 banana-nanicas or bananas-da-terra (ripe) cut in half lengthwise and then in half again
1/3 cup of wheat flour
Salt to taste

In a large skillet with 4 tablespoons of oil, sauté the onion, garlic, and rosemary until golden brown
Add the beef, stirring constantly, until cooked through (do not let it dry out too much)
Remove from heat, season, and reserve
Season the eggs with salt
Heat 2 tablespoons of butter in a non-stick skillet over low heat, add the eggs, and cook until firm but still moist
Mix gently with a fork or spatula and keep warm. Reserve
Dip banana slices into flour and then fry in the remaining oil and butter mixture until lightly browned
Mix the beef with the cooked eggs, place in a serving dish, and top with fried bananas
Serve immediately
