1 red bell pepper, seeds removed, chopped
700g of dried beef, desalinated for three days
3 liters of water
1.5 kg of cassava, cut into pieces
2 beef bouillon cubes
Salt to taste (optional)
1/2 cup of green onion, chopped

In a pressure cooker, heat the olive oil over medium heat
Add the onion, garlic, and bell pepper
Cook, stirring occasionally, for five minutes or until the vegetables are tender
Add the beef and cook for an additional ten minutes or until browned
Add 3 cups of water, cover the cooker, and cook for 30 minutes (counting from when the cooker starts to whistle)
Let it cool, then check if the beef is tender
If not, continue cooking until tender
In another pot, combine the remaining water, cassava, and beef bouillon cubes
Cook over medium heat for 35 minutes or until the cassava is tender
Drain and reserve
Remove the beef from the cooker and shred it well
Return the beef to the cooker with the vegetables and season with salt if needed
Add the green onion and transfer to a serving dish
Garnish with green onions and serve with cassava.
