Rub the meat with lemon zest, pressing firmly, until it is evenly moistened
Make shallow cuts in the meat and insert slivers of garlic with salt into the incisions
Dust the surface with salt, pepper, and wheat flour
Place in a roasting pan with the fatty side up
Bake in a medium oven (190°C) for about 35 minutes per kilogram
Do not cover the roast
Serve with your preferred sauce thickened with a little flour, garnished with mashed potatoes, peas, and hard-boiled eggs.
