Clean the meat thoroughly, remove all fat and skin
Place it in the freezer until well-frozen, then remove and cut into very thin slices with a cold meat slicer
As you're cutting, arrange the slices on a platter
Mix the remaining ingredients well, and when serving, pour them over the meat
If desired, add capers or grated Parmesan cheese
