2 tablespoons of olive oil
2 tablespoons of annatto
1 chopped onion
2 cloves of garlic, minced
2 teaspoons of chopped cilantro
2 chopped tomatoes
500g of cooked and flaked crab meat
4 eggs
1/2 cup of grated Parmesan cheese
Salt and black pepper to taste

In a pan, heat the olive oil and annatto and sauté the onion, garlic, cilantro, and tomato until softened
Add the cooked crab meat and cook for a few more minutes
Season and divide among crab cakes
Beat the eggs until frothy and spread over the crab mixture
Sprinkle the Parmesan cheese on top of the eggs
Bake in a hot oven (200°C) for 7 minutes
Serve 10 crab cakes.
