8 cod fillets or sardines, cleaned and boneless (480g)

Mixture:
1 cup of low-fat plain yogurt
2 tablespoons of sorrel chopped
1 tablespoon of olive oil

Mixture:

Wash and dry the fish well
In a small bowl, mix together the sorrel, garlic, salt, and black pepper
Spread a little of this mixture inside each fish
Make several diagonal cuts on the fish
Place them in a baking dish coated with olive oil
Let it rest for about 30 minutes
Heat the oven to very hot (250°C)
While the fish rests, prepare the sauce: mix together the yogurt and sorrel. Reserve
Heat a small skillet over medium heat, fry the garlic for about 2 minutes, season with salt
Add to the yogurt and stir well
Bake the fish in the oven for about 15 minutes or until it's cooked
Serve immediately with the sauce and garnish with sorrel
