10 eggs
1/2 cup of shrimps
3 tablespoons of butter
1 jigger of Vermouth
Salt
Pepper

Crack the eggs and place them in a bowl, beat well with a fork
Place the bowl in a warm water bath
Mix constantly
When they are still liquid but creamy, add the butter (which should not be chilled!) and the cooked shrimps
Add salt, pepper
Remove the bowl from the water bath
Add the Vermouth (dry)
Mix and adjust the seasoning if necessary.
