8 cleaned and gutted calves' feet without heads or bones
salt and wheat flour for dusting
15 green onions
2 tablespoons of mustard
2 tablespoons of natural yogurt
1 egg
4 slices of whole grain bread or rye
black pepper to taste
2 tablespoons of butter or margarine

Wash the calves' feet and dry them
Season inside and out with salt
Dust with wheat flour
Remove excess flour
Wash and clean the green onion
Chop 3 green onions
Use the remaining portion, cutting into slices using some of the green part as well. Reserve
Mix the chopped green onion with mustard, yogurt, and egg
Remove the crust from the bread and crumble the slices
Mix with the green onion mixture
Stuff the calves' feet with this mixture and reserve
Fry the green onion for a few minutes in butter or margarine
Arrange in a refractory form
Top with the stuffed cavallos
Bake in a moderate temperature oven (180°C) for about 20 minutes or until the cavallos are cooked.
