Cut the banana into small cubes, place in a pot with water and cook until tender (about 7 minutes)
Drain and put in a bowl with cold water to give a thermal shock and stop cooking. Reserve
Finely chop the cilantro, onion, bell pepper, shallot, and tomatoes
Mix everything and add banana, lime juice, orange juice, and ketchup
Season to taste with salt and Tabasco
Let it rest for 2 hours to allow flavors to meld
Serve cold.
