Place the chilled heavy cream in a stand mixer at low speed, allowing it to thicken and form lines on the paddle attachment

Continue beating until slightly thickened and add the caster sugar and vanilla extract

Stop the mixer and scrape down the sides with a spatula until the mixture is smooth

Immediately refrigerate and keep covered until serving
Note: if you overbeat, your cream will break and become yellowish, joining water, becoming butter, and not being usable
It's best to use it quickly.
