Bring water to a boil in a medium saucepan
Remove from heat and add clean green onion leaves
Let it sit for 1 minute
Carefully remove and let air dry on a clean cloth
Meanwhile, moisten the sausage with a little warm water and season with remaining ingredients
Mix until forming a paste
Place two green onion leaves on top and spread the sausage paste
Roll up like a small wrap and arrange in a serving dish
Serve chilled with mustard or yogurt sauce.
