    For the crust: Blend biscuits in a processor until fine

    Add butter and mix well

    Use this mixture to line the bottom and sides of a 23 cm diameter springform pan, pressing with your fingers

    Precalve the oven to 180°C (moderate)

    Gently beat eggs with an electric mixer and add remaining ingredients one at a time, beating after each addition

    Leave to mix for another 30 minutes on low speed, scraping down the bowl occasionally

    Place the filling in the prepared pan and bake for 50 minutes, or until the surface is golden brown or a toothpick inserted into the center comes out clean

    Increase oven temperature to 240°C (hot) and bake for an additional 10 minutes

    Remove from the oven and let cool

    Unmold and refrigerate before serving
