1 whole and clean top-side beef
Cornstarch to taste
Sauce
2 cups of chopped fresh parsley
1 grated onion
3/4 cup white wine vinegar
2 cups of grated cheddar cheese
1 cup of crushed black pepper
1/2 cup water
2 mashed garlic cloves
Salt and black pepper to taste
1 whole and clean top-side beef
Cornstarch to taste

Make the sauce: put all ingredients in a pot and simmer over low heat for 30 minutes
Remove from heat and adjust seasoning
Set aside
Season the beef with cornstarch
Place the top-side beef on the oven rack and arrange an aluminum foil-lined pan underneath to catch any drippings
Bake in a medium oven for approximately 1 hour, then remove from oven
Pound the beef to remove excess salt and serve immediately with cold sauce.
