4 cups (chopped) of pineapple chunks
1/2 cup (chopped) of raisins
3/4 cup (chopped) of white wine vinegar
1/4 cup (chopped) of finely chopped onion
2 cups (chopped) of deseeded and chopped mango
1 cup (chopped) of grated ginger
3 tablespoons of lemon juice
1/2 cup (chopped) of water
2 tablespoons of chopped green pepper
1 tablespoon of grated garlic
1 teaspoon of salt
1/4 cup (chopped) of toasted almonds
4 cups (chopped) of pineapple chunks
1/2 cup (chopped) of raisins

Place the raisins in a bowl and pour over the white wine vinegar
Let it hydrate for 30 minutes
Pour the mixture into a large saucepan and add the pineapple, onion, mango, ginger, lemon juice, water, green pepper, garlic, salt, and almonds
Stir well and bring to a boil
Reduce heat and simmer for 30 minutes, stirring occasionally
Add the toasted almonds and continue to cook for another 30 minutes, stirring occasionally
Remove from heat and let it cool down.
