2 cups of ricotta
2 cloves of garlic, minced
2 tablespoons of chopped parsley
2 tablespoons of chopped cilantro
1 teaspoon of ground oregano
2 tablespoons of lemon juice
1/4 cup of olive oil
to taste
1/4 cup of dried apricots, pit removed
1/3 cup of toasted pecans
8 slices of whole grain bread

Sieve the ricotta and mix in the garlic, parsley, cilantro, oregano, lemon juice, and olive oil
Mix well with salt to taste
Serve on whole grain bread and garnish with apricots and pecans
