2 tablespoons of brown sugar
1 tablespoon of olive oil
1 tablespoon of ground ginger
1 tablespoon of dried mint
500g of peeled and seeded tomato, chopped
3 sprigs of thyme
2 bay leaves
1 Scotch bonnet pepper, seeded and chopped
1 cinnamon stick
Salt to taste

Heat the olive oil, Scotch bonnet pepper, ginger, thyme, dried mint, bay leaves, and cinnamon
Add the tomato and salt
Simmer over low heat for 20 minutes
If it thickens, add a little water
Add the brown sugar and simmer for an additional 5 minutes
Turn off the heat, remove the thyme, bay leaves, and cinnamon stick
Pack into sterilized jars, let cool, seal, and refrigerate
