2 large egg yolks
'4 tablespoons of mustard'
1/2 cup of breadcrumbs
1/2 cup of all-purpose flour
fat or oil for frying

Remove any excess fat from the rabbit pieces, wash, and dry them
Season with salt and black pepper
In a small bowl, mix together the chopped green onion, egg yolks, and mustard
On a plate, combine the breadcrumbs and all-purpose flour
Dip each piece of rabbit in the mustard mixture, then coat in the breadcrumb mixture, pressing gently to adhere
Let it rest for about 30 minutes on a wire rack, if possible, allowing the coating to set (make sure they are well coated)
Fry the pieces in hot oil until golden brown, flipping once after 5 minutes, or until cooked through
Arrange them in a single layer in a baking dish and bake in a moderate oven preheated to 150°C for about 45-60 minutes, or until tender
Serve 8 portions
Note: We used 1 1/3 cups of oil to fry and had 3/4 cup leftover after frying.
