1 rabbit
2/3 cup of olive oil
3 diced tomatoes
18 green scallions
2 sprigs of parsley
2 cloves of garlic, minced
2/3 cup of red wine
1 bay leaf
1/2 teaspoon of cinnamon
1/2 teaspoon of ground cumin
salt and pepper to taste
water
1 rabbit

Cut the rabbit into pieces and brown it in a little olive oil
Add enough water to cover the rabbit pieces
Bring to a boil and cook slowly for 1 hour
Cook the tomatoes in a pot until they break apart, then add chopped green scallions and remaining ingredients
Cover and cook slowly until the rabbit is tender
If it becomes too dry, add more water
Remove the rabbit pieces to a serving dish
Strain the sauce and pour it over the top.
