    When buying artichokes, look for those that are half-closed and firm. To prevent discoloration after cooking and make them even more succulent, let the artichokes rest for 1 hour in a large pot with cold water and 1 tablespoon of vinegar per liter of water.

    To give a different flavor, cook the artichokes in chicken or beef broth instead of water.

    To prepare them in the microwave (which saves an incredible amount of time), cut them like in the photos, wrap them in plastic film (Rolopac or Magipack) and place them on the oven tray. In high power, program for 8 1/2 minutes, for medium-sized artichokes. Remove from the oven, let rest for 3 minutes and serve with one of the suggested sauces.

    1- Cut off the stem just above the lower leaves.

    2- Remove the outer tougher leaves.

    3- With a serrated knife, cut off the leaf tips.

    4- With scissors, cut off any remaining intact leaf tips.

    5- After cooking, remove the central part.

    6- With a small spoon, scrape out the center with the fennel.
