Cut the pineapple into wedges and remove the core
Place it in a saucepan and sprinkle with sugar
Add the clove, cinnamon stick, and water
Bring to low heat for 20 minutes or until the pineapple is tender
Remove from heat and let cool
Transfer to a compote dish and serve at room temperature or chilled.
